There are days when I just crave something warm and comforting without fussing over the stove, and this simple slow cooker chicken and stuffing fits the bill beautifully. It’s one of those dependable, hearty meals that practically makes itself while you go about your day—perfect for busy afternoons or cozy evenings at home.
Ingredients
-
4 boneless, skinless chicken breasts
-
Salt and pepper, to taste
-
½ cup low-sodium chicken broth
-
1 can (10.75 oz) cream of mushroom soup
-
1 box (6 oz) stuffing mix
-
¼ cup water
Instructions
-
Lightly season the chicken breasts with salt and pepper, then arrange them snugly in the bottom of your slow cooker.
-
Pour the chicken broth evenly over the chicken so it stays moist as it cooks.
-
In a separate bowl, stir together the cream of mushroom soup, stuffing mix, and water until everything is nicely combined and the stuffing begins to soften.
-
Spoon this mixture over the chicken, spreading it out to cover the top. Cover the slow cooker and cook on high for about 4 hours, or low for 6–7 hours, until the chicken is tender and the stuffing is cooked through.
-
Serve warm with a simple salad or your favorite steamed vegetables for a comforting, no-stress dinner.
