Ingredients:
1 can whole kernel corn, drained
2 eggs
Salt & pepper, to taste
½ cup flour
1 tsp baking powder
½ cup shredded cheese
1 pat butter
2 tbsp oil
¼ cup chopped parsley (optional)
Instructions:
-In a bowl, beat eggs with salt and pepper, then whisk in flour and baking powder until smooth.
-Stir in the corn, cheese, and parsley.
-Heat butter and oil in a skillet over medium heat.
-Drop spoonfuls of the batter into the pan and cook until golden brown on each side.
-Drain on paper towels and serve hot.
