This hearty Amish-style chicken and noodles recipe is the kind of simple, satisfying dish I grew up loving—tender chicken, rich broth, and soft noodles coming together with almost no fuss. It’s the perfect way to feed your family when you want comfort without spending all evening at the stove.
Ingredients
- 4 boneless, skinless chicken breasts
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon poultry seasoning
- 1 ½ teaspoons garlic powder
- 2 cans (10.5 oz each) cream of chicken soup
- ½ cup unsalted butter, sliced
- 2 teaspoons reduced-sodium chicken base (such as Better Than Bouillon®)
- 4 cups low-sodium chicken broth
- 24 oz frozen homestyle egg noodles (such as Reames®), or 8 oz dry wide egg noodles
- 2 cups frozen mixed vegetables (optional)
Instructions
- Lay the chicken breasts in the bottom of your slow cooker. Sprinkle the salt, pepper, poultry seasoning, and garlic powder evenly over the top.
- Spread the cream of chicken soup over the seasoned chicken.
- Add the sliced butter right on top of the soup layer.
- Stir the chicken base into the broth until dissolved, then pour the mixture over everything in the slow cooker.
- Cover and cook on Low for 4–6 hours, or until the chicken is tender enough to shred easily.
- Lift the cooked chicken out with tongs and set it aside on a plate. Cover to keep it moist.
- Add the frozen noodles (and vegetables, if you’re using them) directly into the broth mixture. Stir gently. Cover and cook on High for 1–2 hours, giving it a good stir halfway through.
- If you’re using dry egg noodles, add them about 12–15 minutes before serving, or cook them separately on the stovetop and stir them in at the end.
- Shred the chicken with two forks, keeping it covered so it stays juicy.
- Once the noodles are soft and the broth has thickened, add the shredded chicken back into the slow cooker and stir everything together. If the mixture is thicker than you prefer, a splash of warm broth or water will loosen it nicely.
