Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
- 2 tablespoons olive oil
- 4 garlic cloves, finely minced
- ¼ cup freshly grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- Salt and black pepper, to taste
Instructions
- In a large bowl, whisk together the olive oil, minced garlic, Parmesan, Italian seasoning, paprika, and a good pinch each of salt and pepper. You want a thick, fragrant coating.
- Add the chicken pieces to the bowl and toss until every cube is well coated. Cover and refrigerate for at least 30 minutes—though a couple of hours will deepen the flavor beautifully.
- Preheat your grill to medium-high about 10 minutes before cooking.
- As the grill heats, thread the marinated chicken onto soaked wooden skewers, leaving a little breathing room between each piece so they cook evenly.
