Each bite is chewy, sweet, and loaded with coconut goodness—perfect for serving at potlucks, holidays, or when you just want something indulgent with your afternoon coffee.
Ingredients
Crust
- 2 cups all-purpose flour
- ¾ cup packed brown sugar
- 1 cup unsalted butter, melted
Coconut Layer
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup granulated sugar
- ½ cup all-purpose flour
- 3 tablespoons unsalted butter, melted
- 4 cups sweetened shredded coconut, divided
Instructions
Prep the Pan
Preheat oven to 350°F. Line a 9×13-inch baking pan with foil, letting a little hang over the edges for easy removal. Lightly coat only the sides with nonstick spray.
Make the Crust
In a large mixing bowl, stir together flour, brown sugar, and melted butter until crumbly. Press evenly into the bottom of the pan. Bake for 15 minutes, or until lightly golden. Remove from oven and lower the temperature to 325°F. Place the pan on a cooling rack while you prepare the filling.
Mix the Coconut Layer
In another large bowl, whisk together eggs, vanilla, sweetened condensed milk, granulated sugar, flour, and melted butter until smooth. Fold in 3 cups of shredded coconut. Spread the mixture evenly over the warm crust.
Top and Bake
Sprinkle the remaining 1 cup of coconut over the filling. Bake for 25–30 minutes, or until the edges are golden brown and the center has set.
Cool and Slice
Let the bars cool completely in the pan. Use the foil overhang to lift them out, then slice into squares or bars.
