Ingredients
For the Cake:
2 cups all-purpose flour
1 ½ cups granulated sugar
1 ½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon sea salt
2 large eggs (at room temperature)
¾ cup vegetable oil
¾ cup sour cream
2 teaspoons vanilla extract
8 ounces cream cheese (softened)
For the Frosting:
4 ounces cream cheese (softened)
4 tablespoons unsalted butter (melted)
2 cups powdered sugar
¼ teaspoon vanilla extract
1–2 teaspoons milk (as needed for consistency)
Instructions
1. Preheat the oven:
Set your oven to 350°F (175°C).
Prepare a 9×13-inch baking pan by greasing it and lightly dusting it with flour.
2. Combine the dry ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Mix the wet ingredients:
In another bowl, beat the eggs, vegetable oil, sour cream, vanilla extract, and softened cream cheese until smooth and creamy.
4. Combine wet and dry ingredients:
Gradually add the dry mixture to the wet ingredients. Mix gently until just combined—avoid overmixing.
5. Bake the cake:
Pour the batter evenly into the prepared pan.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool the cake:
Allow the cake to cool completely in the pan before frosting.
For the Frosting:
1. Cream the base:
In a mixing bowl, beat the softened cream cheese and melted butter until creamy.
2. Add powdered sugar:
Gradually mix in the powdered sugar and vanilla extract until smooth.
3. Adjust consistency:
Add milk, one teaspoon at a time, until the frosting reaches your desired consistency.
To Assemble:
Spread the frosting evenly over the cooled cake.
Slice, serve, and enjoy the rich, moist, and creamy goodness!
