Ingredients:
1 ½ tsp butter
1 small onion, chopped
2 pounds of cooked chicken, cut or shredded
1 can of cream of chicken soup
½ cup mayonnaise
1 cup of milk
½ cup roasted red pepper, chopped
1 ½ cup cheddar cheese, mild
1 can refrigerated biscuit dough
Instructions:
-Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter and set aside.
-In a skillet, melt butter over medium heat. Add chopped onion and sauté until translucent and fragrant, about 5 minutes.
-In a large mixing bowl, combine cooked chicken, cream of chicken soup, mayonnaise, milk, roasted red pepper, and half of the shredded cheddar cheese. Mix well to combine.
-Pour the chicken mixture into the prepared baking dish, spreading it out evenly.
-Open the can of refrigerated biscuit dough and place the biscuits on top of the chicken mixture in the baking dish. You can arrange them in a single layer or slightly overlapping, depending on your preference.
-Transfer the casserole to the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and cooked through.
-Once baked, remove the casserole from the oven and sprinkle the remaining shredded cheddar cheese on top. Return the casserole to the oven for an additional 5 minutes, or until the cheese is melted and bubbly. Garnish with chopped parsley or green onions if desired.
-Allow the Creamed Chicken and Biscuits Casserole to cool slightly before serving. Spoon generous portions onto plates and enjoy the comforting flavors of this delicious dish.
