Freezer Lemon Fudge

If you love the bright zing of lemon paired with a creamy sweetness, this freezer lemon fudge is going to be a treat for you. It’s a refreshing twist on a classic candy—rich enough that a small square is satisfying, yet lightened up with that citrusy pop. Perfect for keeping on hand when you want a little something sweet, this fudge is best stored in the freezer to stay firm and fresh.

Ingredients:

  • Nonstick cooking spray
  • 1 (12-ounce) bag white chocolate chips
  • ½ can (14 ounces) sweetened condensed milk
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons lemon zest, divided
  • ½ teaspoon lemon extract
  • ¼ teaspoon salt

Instructions:

  1. Line a small 5×7-inch baking dish with parchment paper, leaving extra hanging over the edges to help lift the fudge out later. Lightly coat with nonstick spray.
  2. In a microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk. Heat in 30-second bursts, stirring after each interval, until the mixture is smooth and fully melted.
  3. Stir in the lemon juice, 2 tablespoons of lemon zest, lemon extract, and salt until everything is well incorporated.
  4. Pour the mixture into the prepared dish, spreading evenly. Sprinkle the remaining tablespoon of lemon zest over the top for a pretty finish.
  5. Place the dish in the freezer and let the fudge set for at least 4 hours, or until firm.
  6. When ready to serve, lift the fudge out using the parchment overhang. Use a sharp knife dipped in hot water (wipe clean between cuts) to slice into squares.
