French Silk Pie Bars

There’s just something magical about a dessert that feels both effortless and a little indulgent. These French Silk Pie Bars bring all the charm of the classic pie—silky chocolate, buttery crust, and billowy whipped cream—without any fussing over a pastry plate. They make a beautiful addition to a holiday table, but they’re just as welcome on a quiet weeknight when you want something truly special.

Ingredients

For the Crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • For the Chocolate Layer
  • 1 cup semisweet chocolate chips
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs

For the Topping

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a medium bowl, stir together the flour, melted butter, granulated sugar, and salt until the mixture comes together like a soft dough.
  3. Press the dough firmly and evenly into the bottom of your prepared pan. Bake for 15–18 minutes, or just until the edges take on a light golden color. Set aside to cool completely.
  4. Place the chocolate chips in a microwave-safe bowl and warm them in 30-second bursts, stirring between each round, until the chocolate is smooth and glossy. Let it cool for a moment.
  5. In a large mixing bowl, whip the softened butter with the granulated sugar until the mixture becomes pale and fluffy.
  6. Pour in the melted chocolate and vanilla, blending until everything is silky and well combined.
  7. Add the eggs one at a time, beating for 3 full minutes after each addition. This long mixing time is what gives the filling its signature smooth, airy texture.
  8. Spread the chocolate filling over the cooled crust, smoothing it out to the edges.
  9. In a separate chilled bowl, beat the heavy cream with the powdered sugar until stiff peaks form.
  10. Gently spread the whipped cream across the chocolate layer.
  11. Refrigerate the bars for at least 4 hours, or until they’re firm enough to slice cleanly. Cut into squares and enjoy every decadent bite.
