Ham and Potato Au Gratin Recipe

Ingredients:

2 pounds potatoes, peeled and thinly sliced

1 1/2 cups cooked ham, diced

1 small onion, finely chopped

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups milk

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon paprika

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Directions:

-Preheat the oven to 350°F (175°C) and grease a 2-quart casserole dish.

-Layer half the potatoes, ham, and onions in the dish, then repeat with the remaining halves.

-Melt butter in a saucepan, stir in flour, and cook for a minute. Gradually add milk, simmer until thickened, and season with salt, pepper, and paprika.

-Remove from heat, add cheddar, and pour over the layers.

-Cover with foil and bake for 60 minutes. Uncover, add Parmesan, and bake for another 20-30 minutes until golden.

-Let it cool slightly before serving.

-Add a pinch of cayenne or hot sauce for extra heat.

-For a vegetarian version, replace ham with sautéed mushrooms and spinach.
