Ingredients
- 2 tablespoons olive oil, divided
- 2 pounds boneless, skinless chicken breasts, cut into bite-size pieces
- 1 small red onion, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 pound Brussels sprouts, trimmed and quartered
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ cup chicken broth
- ½ cup dried cranberries
- ½ cup shredded sharp cheddar cheese
- Salt and pepper, to taste

Instructions
- Preheat your oven to 375°F.
- In a 9×13-inch baking dish, combine the sweet potatoes, red onion, Brussels sprouts, garlic, smoked paprika, and cumin. Drizzle with 1 tablespoon of the olive oil, season with salt and pepper, and toss until everything is well coated.
- Pour the chicken broth evenly over the vegetables. Cover the dish tightly with foil and bake for 22–25 minutes, or until the veggies are just tender when pierced with a fork.
