Ingredients
- 1 bag (10 oz) Tostitos Scoops or similar mini tortilla cups
- 1 package (8 oz) cream cheese, softened to room temperature
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1 large egg
- 1 can (15 oz) whole kernel corn, drained well
- 1 small can (4 oz) diced green chiles (choose your heat level)
- ¾ teaspoon garlic powder
- ¾ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ cup grated Parmesan or Asiago cheese for the topping
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- Arrange the tortilla scoops on the baking sheet so they sit upright like little bowls.
- In a medium bowl, mix together the softened cream cheese, shredded cheese, egg, corn, green chiles, garlic powder, salt, and black pepper until smooth and well combined.
- Spoon about a tablespoon of the creamy filling into each chip cup, being careful not to overfill.
- Sprinkle each with a touch of Parmesan (or Asiago) for a golden, cheesy finish.
- Bake for 12–15 minutes, or until the tops are bubbling and lightly golden.
