Pecan Pie Brownie Bombs

Ingredients

For the Brownie Layer:

1 box brownie mix (plus ingredients required by the mix, usually eggs, oil, and water)

1/4 cup all-purpose flour

For the Pecan Pie Filling:

1 cup chopped pecans

1/2 cup brown sugar, packed

1/2 cup corn syrup

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

2 large eggs

For Assembly and Topping:

1/2 cup semi-sweet chocolate chips

1 tablespoon vegetable oil

Extra chopped pecans for garnish
Instructions

Prepare the Brownie Batter:

Preheat your oven to 350°F (175°C). Prepare the brownie mix according to the package instructions, adding the extra 1/4 cup of flour to the mix. This helps thicken the batter.

Make the Pecan Pie Filling:

In a medium bowl, mix together the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and eggs until well combined.

Assemble the Brownie Bombs:

Grease a mini muffin tin. Spoon about a tablespoon of brownie batter into each cup. Add a teaspoon of pecan pie filling on top of the brownie batter. Cover the filling with another tablespoon of brownie batter.

Bake:

Bake in the preheated oven for 20-25 minutes, or until the brownie bombs are set and a toothpick inserted into the center comes out clean.

Prepare the Topping:

In a microwave-safe bowl, melt the chocolate chips and vegetable oil together in 30-second intervals, stirring between each until smooth.

Finish and Serve:

Once the brownie bombs have cooled, drizzle the melted chocolate over the top and sprinkle with extra chopped pecans. Allow the chocolate to set before serving.
Variations

Nut-Free Brownie Bombs:

Replace the pecans with a nut-free alternative such as sunflower seeds or omit them entirely and use more chocolate chips.

Salted Caramel Brownie Bombs:

Add a dollop of salted caramel sauce to the center of each brownie bomb instead of the pecan pie filling.

Gluten-Free Brownie Bombs:

Use a gluten-free brownie mix and ensure that all other ingredients are gluten-free.

White Chocolate Brownie Bombs:

Replace the semi-sweet chocolate chips with white chocolate chips for a different flavor profile.
