Philly Cheese Steak Sloppy Joes Recipe

There’s something wonderfully comforting about a recipe that brings two beloved classics together in one warm, messy, truly satisfying sandwich. These Philly Cheese Steak Sloppy Joes have all the rich flavor of a traditional cheesesteak, but with the ease of a skillet supper—perfect for busy weeknights or casual weekends at home. Tender ground beef, sweet sautéed vegetables, and creamy Provolone melt together into a hearty filling that sits beautifully on a toasted brioche bun. Simple, familiar, and always a crowd-pleaser.

Ingredients:

  • 1 lb lean ground beef for the filling
  • 2 tbsp butter for sautéing
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 8 oz brown mushrooms, finely chopped
  • 2 tbsp ketchup for the sauce
  • 1 tbsp Worcestershire sauce for the sauce
  • 1/2 tsp Kosher salt, or more to taste
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp cornstarch to help thicken
  • 1 cup beef broth for the sauce
  • 8 oz Provolone cheese, sliced and chopped
  • 6 brioche hamburger buns, toasted

Instructions:

  1. Warm a large cast iron skillet over medium-high heat and add the ground beef. Let it cook undisturbed until it develops a deep brown crust, then break it into pieces and continue cooking until no pink remains.
  2. Transfer the beef to a plate, keeping the drippings in the skillet. Add the butter, followed by the onion, bell pepper, and mushrooms. Let them sit for a minute or two to get some color, then stir and continue cooking until they’re tender and caramelized.
  3. Return the cooked beef to the skillet. Stir in the ketchup, Worcestershire sauce, salt, and pepper. In a small bowl, whisk the beef broth with the cornstarch, then pour it into the skillet and cook until the sauce thickens—usually about 3 to 5 minutes.
  4. Turn off the heat and gently fold in the chopped Provolone until it melts into a silky, cheesy sauce that coats everything beautifully.
  5. Toast the brioche buns under a broiler or in a toaster oven. A little swipe of butter on the cut sides before toasting adds wonderful flavor.
