Ingredients:
1 cup non-fat Greek yogurt
1/2 cup light mayonnaise
1/2 cup finely chopped spinach
1/4 cup finely chopped water chestnuts
1/4 cup finely chopped bell peppers (any color)
1/4 cup finely chopped cucumber
2 green onions, finely chopped
1 clove garlic, minced
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon dried dill
1/4 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
Optional: a pinch of cayenne pepper for a little kick
Optional: fresh lemon juice for extra flavor
Instructions:
-In a mixing bowl, combine the non-fat Greek yogurt and light mayonnaise. Mix them well until smooth and creamy.
-Add the finely chopped spinach, water chestnuts, bell peppers, cucumber, and green onions to the yogurt mixture. Mix thoroughly to evenly distribute the ingredients.
-Add the minced garlic, onion powder, garlic powder, dried dill, salt, black pepper, and cayenne pepper (if using). These seasonings will add flavor to your dip. Adjust the seasonings to your taste preferences.
-If desired, add a squeeze of fresh lemon juice to enhance the flavors and give the dip a zesty kick.
-Mix all the ingredients together until well combined. Make sure all the veggies and seasonings are evenly distributed throughout the dip.
-Once everything is mixed, cover the bowl with plastic wrap or a lid and refrigerate the dip for at least an hour. Chilling allows the flavors to meld and develop.
-Before serving, give the dip a final stir and adjust the seasonings if necessary.
-Serve your Skinny Poolside Dip with an array of colorful and crunchy vegetables, such as carrot sticks, celery, cucumber slices, bell pepper strips, and cherry tomatoes. You can also provide whole-grain pita chips or baked tortilla chips for dipping.
