There are days when I swear my slow cooker is the real hero of my kitchen. When life gets busy and I still want something hearty and comforting on the table, this simple BBQ pulled pork is my go-to. Just a handful of ingredients, almost no prep at all, and by dinnertime you’ve got tender, saucy pork that tastes like you fussed over it for hours. It’s the kind of recipe my family asks for again and again.
Ingredients:
- 1 pork shoulder roast (boneless or bone-in both work beautifully)
- 1 can of Dr Pepper or root beer (either gives that lovely sweetness)
- About 2 cups of your favorite barbecue sauce, divided
Instructions:
- Nestle the pork roast into your slow cooker.
Pour the soda over the top, then add about 1 cup of the barbecue sauce. - Cover and cook on LOW for 8–10 hours, until the pork is fall-apart tender.
- Lift the roast from the slow cooker and let it rest for about 10 minutes.
Shred the meat with two forks. - Spoon 3–4 tablespoons of the cooking juices back into the shredded pork—add a little more if it looks like it needs the moisture—then stir in the remaining cup (or as much as you like) of barbecue sauce.
- Serve the pork piled high on warm rolls or slices of hearty bread, and don’t forget the pickles and onions for a little crunch and tang.
