Slow Cooker Apricot Dijon Spiral Ham

There’s something so comforting about letting a slow cooker gently transform a simple spiral ham into a glossy, tender showpiece. This version leans on bright apricot preserves and a touch of Dijon for a sweet-tangy balance that feels right at home on a holiday table or an easy Sunday supper. It’s one of those set-it-and-relax recipes I love—minimal tending, beautiful results.

Ingredients

  • 1 fully cooked spiral-cut ham, about 8–10 pounds
  • 1 cup apricot preserves
  • ½ cup Dijon mustard
  • ½ cup packed brown sugar
  • ¼ cup apple cider vinegar
  • 1 teaspoon ground cloves
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Nestle the spiral ham into your slow cooker, placing the flat side down so it sits securely.
  2. In a bowl, whisk together the apricot preserves, Dijon mustard, brown sugar, apple cider vinegar, ground cloves, and black pepper until the mixture is smooth and fragrant.
  3. Spoon the glaze evenly over the ham, letting it seep between the slices.
  4. Cover and cook on LOW for 4–5 hours, giving the ham a quick baste with the warm glaze every hour.
  5. When the ham is heated through and wonderfully tender, lift it out carefully and transfer it to a serving platter.
  6. Allow it to rest for a few minutes before slicing. Spoon some of the extra glaze from the slow cooker over the top just before serving.
