Ingredients:
For the Pineapple Filling:
1 can (20 ounces) crushed pineapple, drained
1/2 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
Instructions:
-Preheat your oven to 350°F (175°C) and grease a baking dish lightly to prevent sticking.
-In a medium saucepan, combine the drained crushed pineapple and granulated sugar over medium heat. Stir continuously until the sugar dissolves completely.
-In a small bowl, dissolve the cornstarch in 2 tablespoons of water to create a slurry. Add this mixture to the saucepan with the pineapple and sugar.
-Cook the mixture, stirring constantly, until it thickens to a jam-like consistency. This usually takes about 5-7 minutes.
-Remove the saucepan from the heat and stir in the vanilla extract.
-Pour the pineapple filling into the greased baking dish, spreading it evenly.
-Proceed to make the topping (instructions below).
For the Topping:
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, melted
1 teaspoon baking powder
1/4 teaspoon salt
-In a mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, melted butter, baking powder, and salt. Mix until crumbly.
-Sprinkle the topping evenly over the pineapple filling in the baking dish.
-Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the pineapple filling is bubbly.
-Once baked, remove from the oven and let it cool for a few minutes before serving.
