Method
- Place the chicken in the bottom of the slow cooker in an even layer.
- Scatter the sliced mushrooms over the chicken.
- In a bowl, stir together the Marsala wine and cream of mushroom soup until mostly smooth.
- Pour the Marsala mixture over the chicken and mushrooms, spreading it so the chicken is covered.
- Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is fully cooked and tender.
- If the sauce is thinner than desired, stir together the cornstarch and cold water in a small bowl.
- Add the cornstarch mixture to the slow cooker, cover, and cook on high for 10–15 minutes, until slightly thickened.
- Serve warm over mashed potatoes, rice, buttered noodles, or pasta, with extra sauce spooned over the top.
Notes
Chicken thighs stay especially tender and are more forgiving in the slow cooker. Browning the chicken first is optional but adds deeper flavor.
