Method
- Place the chicken breasts in the bottom of the slow cooker in an even layer.
- If the chicken breasts are very thick, cut them in half lengthwise for more even cooking.
- In a medium bowl, stir together the cream of chicken soup, sour cream, and chicken broth until smooth.
- Pour the creamy mixture over the chicken and spread it so most of the chicken is covered.
- Sprinkle the frozen green beans over the creamy layer.
- Sprinkle the dry stuffing mix evenly over the top without stirring it in.
- Cover and cook on low for 4–5 hours or on high for 2 1/2–3 hours, until the chicken is cooked through and tender.
- Gently fluff the stuffing with a fork before serving.
- Serve the chicken breasts whole with stuffing spooned over the top, or shred the chicken in the slow cooker and stir everything together for a creamy casserole-style meal.
Notes
Check early if your slow cooker runs hot, as chicken breasts can dry out if overcooked. For a softer stuffing texture, drizzle a little extra broth over the top before cooking.
