6-Ingredient Slow Cooker Chicken and Stuffing

Ingredients
  

  • 2 lb boneless skinless chicken breasts
  • 1 box chicken stuffing mix 6 oz
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 2 cups frozen green beans do not thaw

Method
 

  1. Place the chicken breasts in the bottom of the slow cooker in an even layer.
  2. If the chicken breasts are very thick, cut them in half lengthwise for more even cooking.
  3. In a medium bowl, stir together the cream of chicken soup, sour cream, and chicken broth until smooth.
  4. Pour the creamy mixture over the chicken and spread it so most of the chicken is covered.
  5. Sprinkle the frozen green beans over the creamy layer.
  6. Sprinkle the dry stuffing mix evenly over the top without stirring it in.
  7. Cover and cook on low for 4–5 hours or on high for 2 1/2–3 hours, until the chicken is cooked through and tender.
  8. Gently fluff the stuffing with a fork before serving.
  9. Serve the chicken breasts whole with stuffing spooned over the top, or shred the chicken in the slow cooker and stir everything together for a creamy casserole-style meal.

Notes

Check early if your slow cooker runs hot, as chicken breasts can dry out if overcooked. For a softer stuffing texture, drizzle a little extra broth over the top before cooking.
