Ingredients
  

  • 2 1/2 cups milk
  • 3/4 cup sauerkraut drained and chopped
  • 1/2 cup white sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 pie shell 9-inch

Method
 

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together milk, chopped sauerkraut, sugar, eggs, vanilla extract, and salt until well combined.
  3. Pour the mixture into the prepared pie shell.
  4. Bake for about 35 minutes, or until a knife inserted 1 inch from the edge comes out clean.
  5. Allow to cool slightly before slicing and serving.

Notes

For a smoother texture, rinse sauerkraut lightly before using. Sprinkle cinnamon or nutmeg on top for added flavor.
