Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 cups mixed greens spinach, arugula, romaine
  • 1 cup carrots shredded
  • 1 cup red cabbage thinly sliced
  • 0.5 cup dried cranberries
  • 0.5 cup almonds or peanuts sliced or chopped
  • 0.25 cup green onions chopped
  • 0.25 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger grated
  • 1 clove garlic minced
  • salt to taste
  • black pepper to taste

Method
 

  1. Combine greens, carrots, cabbage, cranberries, nuts, and green onions.
  2. Add chicken and toss gently.
  3. Whisk soy sauce, vinegar, sesame oil, sweetener, ginger, and garlic.
  4. Pour dressing over salad and toss to coat.
  5. Serve immediately or chill up to 2 hours.

Notes

Add crispy wonton strips or noodles for extra crunch. For a lighter option, reduce soy sauce and add a splash of lime juice.
