Ingredients
  

  • 2.5 cups all-purpose flour
  • 0.75 tsp salt
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 1.5 tsp espresso powder
  • 8 oz butter unsalted, softened
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1.5 tsp vanilla extract
  • 3 tbsp Baileys Irish Cream
  • 2 eggs
  • 12 oz chocolate chips semi-sweet

Method
 

  1. Whisk flour, salt, baking soda, cinnamon, and espresso powder.
  2. Cream butter and sugars until light and fluffy.
  3. Mix in vanilla and Baileys.
  4. Add eggs one at a time, mixing lightly.
  5. Fold in dry ingredients until just combined.
  6. Stir in chocolate chips.
  7. Chill dough for at least 2 hours.
  8. Preheat oven to 375°F and scoop large dough balls.
  9. Bake 10–12 minutes until edges are golden and centers soft.
  10. Cool before transferring to rack.

Notes

Chilling the dough creates thicker, chewier cookies. For best flavor, let them rest overnight before baking.
