Method
- Preheat oven to 350°F and grease two loaf pans.
- Cream together butter, sugar, eggs, and vanilla until smooth. Stir in buttermilk, flour, and baking soda until just combined.
- Mix cinnamon and sugar topping in a small bowl.
- Divide half the batter between loaf pans. Sprinkle with about three-quarters of the cinnamon sugar mixture.
- Spread remaining batter over each loaf, top with remaining cinnamon sugar, and swirl through batter with a knife.
- Bake for 45 minutes or until a toothpick comes out clean. Cool 20 minutes in pans, then transfer to wire racks to cool completely.
Notes
Delicious warm or toasted with butter. For extra richness, add a simple vanilla glaze after cooling.
