Method
- Mix all avocado salsa ingredients in a bowl and set aside.
- Whisk eggs with smoked paprika and salt.
- Cook chorizo in a skillet until browned. Remove and set aside.
- Scramble eggs in the same skillet until just set.
- Place tortillas flat and add salsa, eggs, sausage, and cheese.
- Fold sides and roll tightly into burritos.
- Pan-fry burritos seam-side down in a lightly oiled skillet until golden, about 3 minutes per side.
- Serve warm.
Notes
Letting the salsa rest enhances flavor. Don’t overcook the eggs—they should stay soft for the best texture inside the burrito.
