Ingredients
  

  • 2 lb carrots peeled and cut
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 2 tbsp butter melted
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chives or parsley chopped, optional

Method
 

  1. Preheat oven to 425°F (or 400°F convection).
  2. Toss carrots with brown sugar, butter, garlic, olive oil, salt, and pepper.
  3. Spread in a single layer on a baking sheet.
  4. Roast 15 minutes, then toss and continue roasting 8–10 minutes until caramelized.
  5. Drizzle remaining glaze over carrots and garnish with herbs before serving.

Notes

Cut carrots evenly for consistent roasting. Avoid overcrowding the pan to ensure caramelized edges instead of steaming.
