Ingredients
  

  • 2 tsp olive oil
  • 1 lb ground beef 90% lean
  • 1 onion finely diced
  • 2 tsp minced garlic
  • 4 cups green cabbage coarsely chopped
  • 2 carrots peeled, quartered, and sliced
  • 4 cups beef broth
  • 24 oz tomato sauce 3 cans
  • 1/2 cup long-grain rice uncooked
  • 1 bay leaf
  • 3 tbsp brown sugar
  • 2 tbsp parsley
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add ground beef and season with salt and pepper. Cook, breaking up meat, until browned, about 4–5 minutes.
  3. Stir in onion and garlic and cook for 2–3 minutes until softened and fragrant.
  4. Add cabbage, carrots, beef broth, tomato sauce, rice, bay leaf, and brown sugar. Season again with salt and pepper.
  5. Bring soup to a simmer and cook for about 25 minutes, or until rice is tender.
  6. Remove and discard bay leaf. Sprinkle with parsley before serving.

Notes

For extra richness, use a mix of beef and pork. Leftovers taste even better the next day.
