Method
- Dice chicken into small 1/3-inch pieces and place in a large mixing bowl.
- Add eggs, mayonnaise, flour, mozzarella, dill, salt, and pepper. Stir until well combined. Cover and refrigerate for 2 hours or overnight.
- Heat oil in a large non-stick skillet over medium heat. Spoon chicken mixture into pan in small mounds and flatten slightly.
- Cook fritters 3 to 4 minutes per side until golden brown and cooked through. Repeat with remaining mixture, adding oil if needed.
- For aioli, whisk together mayonnaise, garlic, lemon juice, salt, and pepper until smooth.
- Serve fritters hot with garlic aioli dip on the side.
Notes
Swap dill for parsley or add parmesan for extra flavor. These fritters also make excellent sliders or wraps.
