  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 tbsp brown sugar packed
  • 1 tbsp granulated sugar
  • 1 tbsp maple sugar or granulated sugar
  • 1 pinch salt
  • 1 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves ground
  • 1/4 tsp nutmeg
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 orange zest
  • 3/4 cup buttermilk
  • 1/2 cup whole milk
  • 1 tbsp butter melted

Method
 

  1. Whisk together flour, baking powder, baking soda, sugars, salt, and spices.
  2. Add egg, vanilla, orange zest, and buttermilk. Mix until just combined.
  3. Gradually whisk in milk until smooth, then fold in melted butter.
  4. Cook pancakes on a buttered skillet over medium heat, 2–3 minutes per side.
  5. Serve warm with butter, maple syrup, and desired toppings.

Notes

Avoid overmixing to keep pancakes light and fluffy. Keep cooked pancakes warm in a low oven while finishing batches.
