  • 2 cups all-purpose flour
  • 1 large apple peeled and chopped
  • 1 cup vegetable oil
  • 1 cup dark brown sugar
  • 1/2 cup granulated white sugar
  • 1/2 cup walnuts chopped
  • 2 large eggs
  • 1 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 350°F and lightly grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together eggs and vegetable oil.
  3. Add cinnamon, brown sugar, white sugar, and vanilla extract, mixing until well combined.
  4. Stir in flour, salt, baking soda, and baking powder until fully incorporated.
  5. Fold in chopped apples and walnuts, then pour batter into prepared pan.
  6. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for 15 minutes before slicing and serving.

Notes

Serve warm with whipped cream or vanilla ice cream. Pecans can be substituted for walnuts.
