Ingredients
  

  • 8 oz Brie cheese rind removed
  • 1 sheet puff pastry thawed
  • 1/2 cup cranberry sauce whole-berry
  • 1/2 cup pecans or walnuts chopped
  • honey optional drizzle
  • sea salt flakes
  • fresh thyme optional garnish

Method
 

  1. Preheat oven to 400°F and grease a mini muffin pan.
  2. Roll puff pastry and cut into 24 squares. Press into muffin cups.
  3. Cut Brie into cubes and place one in each pastry cup.
  4. Top with cranberry sauce, chopped nuts, a pinch of salt, and optional honey.
  5. Chill for 30 minutes, then bake for 18–20 minutes until golden.
  6. Garnish with thyme and serve warm.

Notes

Freezing the Brie briefly makes it easier to cut cleanly. These can be assembled ahead and baked fresh for best results.
