Ingredients
  

  • 1 cup Greek yogurt non-fat, plain
  • 1 cucumber thinly sliced
  • 0.25 red onion thinly sliced
  • 1 clove garlic minced
  • 0.5 lemon juiced
  • 0.25 cup dill fresh, chopped
  • 0.25 cup mint fresh, chopped
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly ground

Method
 

  1. Slice cucumber and onion thinly and place in a bowl.
  2. Add yogurt, garlic, lemon juice, dill, mint, salt, and pepper.
  3. Toss until everything is evenly coated.
  4. Serve immediately or chill before serving.

Notes

For best texture, serve within a few hours. You can salt the cucumbers and let them sit for 10 minutes before mixing to reduce excess moisture.
