Ingredients

  • 1 pound large shrimp peeled, deveined, and patted dry
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 3/4 cup Gruyère cheese shredded
  • 1/4 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • salt to taste
  • black pepper to taste
  • 1 tablespoon fresh parsley chopped

Method

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish with butter or nonstick cooking spray.
  2. Heat the butter and olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30–60 seconds, just until fragrant.
  3. Add the fresh spinach and toss gently for 2–3 minutes, or until wilted. Remove the skillet from the heat.
  4. In a medium bowl, combine the heavy cream, shredded Gruyère, mozzarella, Parmesan, and lemon zest. Season with salt and black pepper and stir until well combined.
  5. Spread the wilted spinach evenly across the bottom of the prepared baking dish.
  6. Arrange the shrimp in a single layer over the spinach.
  7. Pour the cream and cheese mixture evenly over the shrimp, spreading it gently so the shrimp and spinach are well coated.
  8. Bake for 20–25 minutes, or until the sauce is bubbling, the cheese is golden, and the shrimp are opaque and fully cooked.
  9. Check that the shrimp have reached an internal temperature of 145°F (63°C).
  10. Remove the gratin from the oven and let it rest for about 5 minutes. Sprinkle with chopped fresh parsley before serving.

Notes

For extra color, broil the gratin briefly at the end until the cheese is deeply golden. Serve with crusty bread, rice, or pasta to soak up the creamy sauce.
