Method
- Whisk mayonnaise, sour cream, lemon juice, and Dijon mustard until smooth.
- Fold in shredded imitation crab gently.
- Add celery, bell pepper, green onions, and corn; mix lightly.
- Season with salt and pepper; stir in herbs.
- Chill at least 30 minutes.
- Serve over lettuce or in sandwiches.
Notes
For extra brightness, add a splash more lemon juice before serving. Great with toasted bread or tucked into wraps.
