Ingredients
  

  • 1.5 lb baby potatoes halved
  • 2 tbsp olive oil plus extra for drizzling
  • 1/2 cup Parmesan cheese finely grated
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano or thyme dried
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup sour cream optional dip
  • 1/4 cup green onions chopped

Method
 

  1. Preheat oven to 400°F and grease a 9x13-inch baking dish with olive oil.
  2. Mix Parmesan, garlic powder, herbs, paprika, salt, and pepper.
  3. Sprinkle mixture evenly over the base of the dish without stirring.
  4. Place potatoes cut-side down and press into the seasoning.
  5. Drizzle lightly with olive oil and roast for 35–40 minutes until golden.
  6. Let rest briefly, then flip and serve with optional herb dip.

Notes

Use finely grated Parmesan for the crispiest crust. Press potatoes firmly into the cheese layer for best results.
