Method
- Preheat oven to 400°F and grease a 9x13-inch baking dish with olive oil.
- Mix Parmesan, garlic powder, herbs, paprika, salt, and pepper.
- Sprinkle mixture evenly over the base of the dish without stirring.
- Place potatoes cut-side down and press into the seasoning.
- Drizzle lightly with olive oil and roast for 35–40 minutes until golden.
- Let rest briefly, then flip and serve with optional herb dip.
Notes
Use finely grated Parmesan for the crispiest crust. Press potatoes firmly into the cheese layer for best results.
