Ingredients
  

  • 8 oz elbow macaroni
  • 6 hard-boiled eggs chopped
  • 0.33 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.5 tsp paprika plus more for garnish
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 celery stalks finely chopped
  • 3 green onions sliced
  • 0.25 cup sweet pickle relish optional
  • parsley for garnish

Method
 

  1. Cook pasta until al dente, then drain and cool.
  2. Whisk mayonnaise, sour cream, mustard, vinegar, sugar, and spices.
  3. Add pasta, eggs, celery, onions, and relish.
  4. Gently fold until evenly coated.
  5. Chill at least 1 hour before serving.
  6. Garnish with paprika and parsley before serving.

Notes

For extra flavor, add a splash of pickle juice or a pinch of smoked paprika. Best served cold after chilling.
