Method
- Line a 9x9-inch baking dish with parchment paper.
- Cut gumdrops in half and set aside.
- In a heatproof bowl over simmering water (double boiler), melt butter, white chocolate chips, and marshmallows, stirring constantly until smooth.
- Remove from heat and let cool slightly for a few minutes.
- Stir in chopped gumdrops until evenly distributed.
- Transfer mixture to prepared pan and spread evenly using parchment paper to prevent sticking.
- Refrigerate for at least 2 hours or until firm. Cut into bars before serving.
Notes
Store in the fridge for best texture. Add nuts or swap gumdrops for dried fruit for variation.
