  • 1.75 cups rolled oats
  • 0.5 cup butter unsalted, softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup apple chopped

Method
 

  1. Preheat oven to 350°F and line baking sheets.
  2. Mix flour, spices, baking soda, salt, and oats.
  3. Cream butter and sugars, then mix in egg and vanilla.
  4. Combine dry ingredients with wet mixture.
  5. Fold in chopped apple.
  6. Scoop dough onto baking sheets.
  7. Bake 12–15 minutes until tops are set.
  8. Cool before transferring to rack.

Notes

Use firm apples for the best texture. These cookies stay soft thanks to the moisture from the apples—store in an airtight container.
