Hearty Crock Pot Cowboy Soup

Ingredients
  

  • 2 lbs ground beef browned and drained
  • 4 Yukon Gold potatoes peeled and cubed
  • 2 cans mixed vegetables undrained
  • 1 can sweet corn undrained
  • 1 can condensed tomato soup
  • 1 can diced tomatoes
  • 1 can cut green beans undrained
  • 1 pinch salt to taste
  • 1 dash black pepper to taste
  • 2 tbsp sugar

Method
 

  1. Peel Yukon Gold potatoes and cut into small cubes.
  2. Brown ground beef in a skillet over medium heat and drain excess grease.
  3. Add browned beef and cubed potatoes to a large slow cooker.
  4. Pour in mixed vegetables, sweet corn, green beans, condensed tomato soup, and diced tomatoes with their liquids.
  5. Season with salt, black pepper, and sugar. Stir everything together until well combined.
  6. Cover and cook on LOW for 2–3 hours, until potatoes are tender and flavors are blended.
  7. Serve hot and enjoy.

Notes

Top with shredded cheese or crackers for extra comfort. Ground turkey can be substituted for a lighter version.
