- Peel Yukon Gold potatoes and cut into small cubes.
- Brown ground beef in a skillet over medium heat and drain excess grease.
- Add browned beef and cubed potatoes to a large slow cooker.
- Pour in mixed vegetables, sweet corn, green beans, condensed tomato soup, and diced tomatoes with their liquids.
- Season with salt, black pepper, and sugar. Stir everything together until well combined.
- Cover and cook on LOW for 2–3 hours, until potatoes are tender and flavors are blended.
- Serve hot and enjoy.
Notes
Top with shredded cheese or crackers for extra comfort. Ground turkey can be substituted for a lighter version.
