Method
- Preheat oven to 375°F and grease an 8x8-inch baking dish.
- Mix oats, half the pecans, baking powder, cinnamon, nutmeg, and salt.
- Add almond milk, maple syrup, egg, oil, and vanilla. Stir well and fold in bananas.
- Pour mixture into prepared dish and spread evenly.
- Top with remaining pecans and bake for 35–40 minutes until set.
- Cool for a few minutes before serving. Drizzle with extra maple syrup if desired.
Notes
You can substitute apples for bananas for a slightly different flavor. This dish stores well and can be reheated for easy breakfasts throughout the week.
