Ingredients
  

  • 1 cup carrots finely grated
  • 1 cup rolled oats
  • 1/2 cup almond flour or ground nuts
  • 1/3 cup maple syrup or honey
  • 1/4 cup nut butter almond or peanut
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla extract
  • salt pinch
  • shredded coconut optional
  • raisins optional
  • walnuts optional, chopped

Method
 

  1. Place grated carrots, oats, almond flour, cinnamon, nutmeg, and salt in a bowl and mix.
  2. Add maple syrup, nut butter, and vanilla. Stir until a thick dough forms.
  3. Adjust texture if needed by adding oats if too wet or syrup if too dry.
  4. Roll mixture into small balls, about 1 tablespoon each.
  5. Optional: roll bites in coconut, nuts, or cinnamon.
  6. Refrigerate for 20–30 minutes until firm.
  7. Serve chilled or store in the fridge for later.
