Method
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy, about 2 minutes.
- Beat in the eggs one at a time.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and mix just until combined.
- Stir in the old-fashioned oats until evenly mixed.
- Fold in raisins, chocolate chips, or nuts, if using.
- Scoop the dough into 1 1/2-tablespoon balls and place them about 2 inches apart on the prepared baking sheets.
- For thicker cookies, chill the dough for 20–30 minutes before baking. For flatter cookies, bake right away.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Use old-fashioned oats for the best chewy texture. Do not overbake; the centers will continue setting as the cookies cool on the pan.
