- Preheat the oven to 350°F and grease a 9x13-inch baking dish.
- In a large bowl, combine the yellow cake mix, crushed pineapple with juice, eggs, and vegetable oil.
- Stir until the batter is well mixed.
- Fold in the sweetened shredded coconut until evenly distributed.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 28–34 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool for about 20 minutes, until slightly warm but not hot.
- In a medium bowl, whisk the instant vanilla pudding mix with the cold milk for about 2 minutes, until thickened.
- Let the pudding sit for a few minutes, then gently spread it over the slightly cooled cake.
- Spread the thawed whipped topping evenly over the pudding layer.
- Cover and refrigerate for at least 2 hours before slicing.
- Garnish with extra coconut, if desired, and serve chilled.

Toasted coconut makes a flavorful garnish with extra crunch. Chill fully before slicing for cleaner squares and a better-set pudding layer.
