Ingredients
  

  • 4 cups mashed potatoes cold
  • 5 slices bacon
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs well beaten
  • 1/2 cup cheddar cheese shredded

Method
 

  1. Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Remove, crumble, and reserve drippings in the skillet.
  2. In a bowl, mix mashed potatoes, beaten eggs, onion powder, salt, and black pepper until combined.
  3. Stir in crumbled bacon and shredded cheddar cheese.
  4. Form mixture into 8 evenly sized patties.
  5. Heat bacon drippings over medium heat and pan-fry patties until golden brown and crisp on both sides.

Notes

Serve with sour cream or applesauce for contrast. Add green onions or garlic for extra flavor variation.
