Ingredients
  

  • 15.25 oz cake mix vanilla
  • 2 tsp pumpkin pie spice
  • 15 oz pumpkin puree
  • 0.75 cup pecans chopped, optional
  • vanilla frosting optional

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix cake mix, pumpkin spice, and pumpkin puree until combined.
  3. Fold in pecans if using.
  4. Scoop dough onto baking sheet, spacing evenly.
  5. Bake for 11–13 minutes until set.
  6. Cool completely before adding frosting if desired.

Notes

These cookies stay soft and cake-like. Store in an airtight container and frost just before serving for best texture.
