Ingredients
Method
- Let the cream cheese soften at room temperature for about 30 minutes, or microwave briefly in 8–10 second bursts until softened but not melted.
- Add the softened cream cheese to a mixing bowl and beat until smooth and creamy.
- Mix in the powdered sugar and vanilla extract until smooth.
- Add the raspberry preserves and lightly mashed fresh raspberries.
- Mix gently until the dip turns pink and the berries are evenly distributed, leaving a few streaks if desired.
- Add the whipped topping and gently fold it in with a spatula until light and fluffy.
- Cover and refrigerate for at least 30 minutes to firm slightly and let the flavors blend.
- Spoon into a serving bowl and garnish with extra raspberries if desired.
- Serve chilled with cookies, fruit, pretzels, crackers, or other dippers.
Notes
For a prettier swirl, reserve a spoonful of raspberry preserves and fold it in lightly at the end. Graham crackers, vanilla wafers, and apple slices pair especially well.
