Ingredients

  • 4 cups sweet potatoes peeled and cut into 1-inch cubes
  • 1 medium sweet onion peeled and cut into wedges
  • 2 cloves garlic thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • salt to taste
  • black pepper freshly ground, to taste

Method

  1. Preheat the oven to 425°F (220°C). Prepare a large, shallow roasting pan or baking sheet, lining it with parchment paper if desired for easier cleanup.
  2. Peel the sweet potatoes and cut them into evenly sized, approximately 1-inch cubes. Peel the sweet onion and cut it into wedges. Thinly slice the garlic cloves.
  3. Place the sweet potato cubes, onion wedges, and sliced garlic in a large mixing bowl. Drizzle with olive oil and toss gently until the vegetables are evenly coated.
  4. Spread the vegetables in a single layer on the prepared baking sheet, leaving a little space between the pieces to encourage even roasting and caramelization.
  5. Roast in the preheated oven for 30–35 minutes, turning the vegetables every 10–15 minutes to promote even browning. Watch the garlic carefully and remove any pieces that begin to brown too quickly.
  6. Continue roasting until the sweet potatoes are fork-tender with golden, slightly crispy edges and the onions are soft and caramelized.
  7. Remove the baking sheet from the oven. Drizzle the balsamic vinegar over the roasted vegetables and season with salt and freshly ground black pepper.
  8. Gently toss until everything is evenly coated with the balsamic vinegar and seasonings.
  9. Transfer the roasted sweet potatoes to a serving dish. Garnish with chopped fresh parsley, if desired, and serve immediately while warm.

Notes

For extra flavor, add a pinch of smoked paprika or fresh rosemary before roasting. A drizzle of maple syrup creates a sweeter, caramelized variation that's perfect for holiday meals.
