Sausage Peppers and Onions

Sausage Peppers and Onions is a hearty, Italian-American skillet meal made with browned sweet Italian sausage, tender bell peppers, onions, garlic, herbs, and a splash of white wine. The vegetables become lightly caramelized while the sausage finishes cooking in the flavorful pan juices. It’s an easy, satisfying dinner that works well on its own, over pasta, or tucked into crusty rolls.

Ingredients

  • 6 links sweet Italian sausage 4 ounces each
  • 2 tablespoons butter
  • 1 medium yellow onion sliced
  • 1/2 medium red onion sliced
  • 4 cloves garlic minced
  • 1 large red bell pepper sliced
  • 1 medium green bell pepper sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup dry white wine or more as needed; chicken broth may be substituted
  • salt to taste
  • black pepper to taste

Method

  1. Heat a large skillet over medium heat. Add the sausage links and cook for 5–7 minutes, turning as needed, until browned on all sides.
  2. Remove the sausages from the skillet and let them rest briefly, then slice them into thick rounds.
  3. Add the butter to the same skillet. Once melted, stir in the yellow onion, red onion, and garlic.
  4. Cook for 2–3 minutes, stirring often, until the onions begin to soften and the garlic is fragrant.
  5. Add the red and green bell peppers. Sprinkle in the dried basil and oregano.
  6. Pour in the white wine and stir well, scraping up the browned bits from the bottom of the skillet.
  7. Cook for 5–7 minutes, or until the peppers and onions are tender but still retain a little texture.
  8. Return the sliced sausage to the skillet and stir everything together.
  9. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the sausage is fully cooked and heated through. Add a splash of extra wine or broth if the skillet becomes too dry.
  10. Taste and season with salt and black pepper as needed. Serve hot.

Notes

For a spicier version, use hot Italian sausage or add red pepper flakes. Serve in toasted rolls, over pasta, or alongside roasted potatoes.
