Ingredients

  • 1 cup light mayonnaise
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon white vinegar
  • 2 teaspoons skim milk
  • 1 cup imitation crabmeat flaked or chopped into small pieces
  • 1 stalk celery finely chopped
  • 1 tablespoon green bell pepper finely chopped

Method

  1. Remove the imitation crabmeat from its packaging and gently separate the pieces using your fingers or a fork. Cut into approximately 1/2-inch pieces or shred into smaller flakes. Transfer to a medium mixing bowl.
  2. Wash the celery and green bell pepper thoroughly. Finely chop the celery and dice the bell pepper into small, evenly sized pieces.
  3. In a separate bowl, combine the light mayonnaise, granulated sugar, salt, white vinegar, and skim milk. Whisk until smooth and creamy, making sure the sugar is evenly incorporated.
  4. Taste the dressing and adjust the seasoning if needed. Add a few drops of milk if you prefer a slightly thinner consistency.
  5. Add the chopped celery and green bell pepper to the bowl containing the imitation crabmeat.
  6. Pour the prepared mayonnaise dressing over the seafood and vegetables. Gently stir with a spoon or spatula until everything is evenly coated, taking care not to break the crabmeat into overly small pieces.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend and the salad to chill thoroughly.
  8. Stir gently before serving. Enjoy chilled on its own, over fresh lettuce, in sandwiches, or with your favorite crackers.

Notes

For extra freshness, add a squeeze of lemon juice or a little chopped fresh dill. For a heartier variation, mix in cooked shrimp or serve the salad in a toasted croissant.
