Ingredients
  

  • 4 baking potatoes sliced
  • 1 cup cheddar cheese grated
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup green onions sliced
  • 1/2 cup sour cream for serving
  • 2 tbsp butter melted, for brushing

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment or lightly grease it.
  2. Brush both sides of potato slices with melted butter and arrange in a single layer on the baking sheet.
  3. Bake for 30–40 minutes, turning once, until potatoes are lightly browned and tender.
  4. Top with crumbled bacon, grated cheddar cheese, and green onions.
  5. Return to oven and bake until cheese is melted and bubbly.
  6. Serve warm with a dollop of sour cream on top.

Notes

For a quicker version, microwave whole potatoes for 6 minutes before slicing and baking. Add jalapeños for a spicy twist.
